From a working-class upbringing in New Zealand to the helm of hatted kitchens, Will Houia’s food story is built on culture, fire, and family. Raised in a Māori and Polynesian household where food meant connection, Will learned early that great cooking doesn’t need to be complicated—it needs heart.
A finalist in the Josephine Pignolet Young Chef of the Year and former head chef at prestigious kitchens including AMARA, Will’s philosophy is simple: seasonal ingredients, cooked with fire, treated with respect. Influenced by wood-fired cooking and bold flavours, his food balances technique with soul—never fussy, never forced.
Now, Will is bringing that same passion back to the streets with Willie’s Food Truck. Expect big flavour, honest cooking, and dishes inspired by his upbringing, his journey, and the joy of feeding people properly.
